Tiffany's Amazing King Cake

Cake:

2 eggs 2 cups Amazing Flour Mix

1⁄2 tsp salt 2 Tbsp pure cane sugar 1⁄2 cup melted butter 1 cup warm water 1 Tbsp yeast

Filling:

1⁄2 cup brown sugar

1⁄2 tsp cinnamon

Frosting:

2, 8-oz pkgs softened organic cream cheese

1 tsp vanilla 1⁄2 cup pure cane sugar

To make the cake: in a small plastic or ceramic bowl mix the sugar, warm water, melted butter, eggs and yeast. Mix well, then set off to the side to allow for the yeast to double.

In a separate plastic or ceramic bowl mix the flour, salt. Stir with a wooden spoon. Then into the flour mixture add the yeast mixture and stir until fully incorporated. Note: the dough will be a cake batter consistency.

In a greased and floured bundt pan pour half of the batter evenly throughout the pan.

For the filling: mix the brown sugar and cinnamon. Then make an indentation in the center of the batter all the way around. Next, carefully spoon the filling into the center indentation all the way around the pan. Note: if the filling goes all the way to the edge the two cake layers will separate.

Once the filling has been added slowly pour or spoon the remaining batter over the top covering the filling.

Allow the dough to rise in a warm place until the dough is nearly doubled in size. Bake at 350 degrees for 40-45 minutes. Remove from the oven and allow to cool. Once the cake is cooled remove the cake from the pan by turning out onto a plate or serving platter.

To make the frosting: in an electric mixer cream together the cream cheese, vanilla, and pure cane sugar and then carefully frost the cake.

For the colored sugars use organic food dyes. In 3 separate plastic bags add 2 Tbsps pure can sugar. Then add 2 drops each of red and blue to make purple. Seal the bag and shake until all the sugar is colored. In the second bag add 2-3 drops of yellow. Seal the bag and shake until all the sugar is colored. In the third bag add 2-3 drops of green. Seal the bag and shake until all the sugar is colored.

Mark off three sections of the frosted cake cover one section with the purple sugar, the next section with the yellow sugar and the third section with the green sugar.

Amazing flour Mix:

2 cups brown rice flour (gluten free)

½ cup Tapioca Flour

½ cup Arrowroot Flour

1 Tbsp Xanthum gum

Mix will and store in an airtight container.
