Pesto Noodles-Wheat/Gluten Free


Pesto Noodles

5 cups tightly packed fresh basil

1 cup olive oil 4 cloves of garlic crushed 2 sprigs of Italian parsley

salt to taste 1⁄2-1 cup pine nuts 1⁄2 cup grated parmesan cheese

1 (16 oz) package brown rice spaghetti noodles

In a food processor add the basil, olive oil, crushed garlic, Italian parsley, salt to tase, pine nuts, and parmesan cheese and process to a fine consistency.

As per noodle package instructions, boil the rice spaghetti noodles, then drain off the water.

Mix the pesto sauce and the noodles together. and serve with a salad and Wheat/gluten free breadsticks.
