Chinese Chicken Salad-Gluten/Wheat Free

Chinese Chicken Salad

Dressing:

6 Tbsp pure maple syrup

1⁄2 cup rice vinegar (wf)

1 tsp salt 1 tsp lemon juice

1⁄4 tsp Chinese 5 Spice

2 Tbsp tamari (gluten/wheat free) 2 Tbsp sesame oil 1⁄4 cup olive oil

1⁄2 cup chopped almonds

4 Tbsp sesame seeds

Mix all of the dressing ingredients and let stand for a minimum of 10-15 minutes. This allows the spices to permeate the oils.

Salad:

2 lbs diced cooked chicken 1 head of red leaf or romaine lettuce

1 head of green cabbage shredded

1 bunch green onions sliced

Add any additional Vegetables desired

Toss the salad with the dressing and serve
