Crepe Dessert Waffles-Wheat/Gluten Free


Crepe Dessert Waffles

3 eggs

¼ cup + 1 ½ Tbsp. Amazing Flour Mix this recipe is in a separate blog posting on this website

¼ tsp salt

½ cup milk (note: alternative milks prevent rising)

3 Tbsp melted butter

In a bowl add the flour, salt ,milk and melted butter. Then add the eggs into the mixture and gently stir until the eggs are mixed into the batter. Pour into a waffle maker and cook until they are done (I use a Belgium Waffle maker) Then place on a cookie sheet in a preheated oven @ 200 degrees to keep warm while you prepare the rest of the batter.

Recipe makes about 3 waffles

Toppings:

Cream Cheese Filling:

1 8 oz pkg. of Organic Cream Cheese

1 tsp. Vanilla

1 cup Organic Whipping Cream

1/2 cup pure cane sugar

In an electric mixer mix all of the ingredients until the mixture is light and fluffy

Pecan Caramel Topping:

3 cups brown sugar

1 1/2 cups brown rice syrup

1 cup water

2 1/2 cups chopped pecans

Mix sugar, brown rice syrup, water in a large sauce pan: bring to a boil, stirring constantly. Then reduce the heat and simmer 5 minutes. Add pecans and serve over waffles.

Fresh Raspberries

Homemade Whipping Cream

2 cups organic whipping cream

1 tsp organic vanilla

1/2 cup pure cane sugar

In an electric mixer add the cream, vanilla and sugar and whip until stiff

Amazing flour Mix:

2 cups brown rice flour (gluten free)

½ cup Tapioca Flour

½ cup Arrowroot Flour

1 Tbsp Xanthum gum

Mix well and store in an airtight container
