Angel Macaroons-Wheat/Gluten Free


Wheat/Gluten free Angel Macaroons

2 organic egg whites

1/8 tsp cream of tartar

¼ tsp salt

1 cup sugar

2 Tbsp Amazing Flour Mix (recipe on this blog site)

3 cups organic unsweetened shredded coconut

½ tsp organic almond extract

½ tsp organic vanilla extract

Beat the egg whites until they are stiff then add in the cream of tartar and salt. Mix well, then slowly add in the sugar and flour mix until stiff peaks form. Lastly fold in the almond and vanilla extracts followed by the coconut.

Using a ice-cream or large cookie scoop drop the cookies onto a cookie sheet and bake for 15 minutes @ 350 degrees.

Amazing flour Mix:

2 cups brown rice flour (gluten free)

½ cup Tapioca Flour

½ cup Arrowroot Flour

1 Tbsp Xanthum gum
