Valentine Truffles
1 pkg. organic cream cheese
2 cups Organic Powdered sugar (I use the brand Wholesome it is organic, nongmo & corn free)
3 cups Chocolate or Carob chips (gluten free)
1 ½ tsp Vanilla extract (gluten free)
1 tsp Almond extract (gluten free)
½ cup chopped nuts or grated organic unsweetened coconut
In a mixer add the cream cheese, powdered sugar, vanilla and almond extract. Mix until smooth and creamy. In a double boiler slowly melt the chocolate chips then pour the melted chocolate into the cream cheese mixer and beat until no streaks remain.
The mixture will be a bit sticky. Drop spoonfuls into either the coconut or the chopped nuts and roll into balls then set on wax paper. Store in airtight containers.
