Casey's Orange Poppyseed Scones Wheat/Gluten Free


Casey's Orange Poppyseed Scones

½ cup brown sugar

½ cup organic buttermilk or organic milk

2 Tbsp fresh squeezed Orange Juice

1 Tbsp Orange zest

½ tsp vanilla

2 Tbsp poppyseeds

½ cup butter (chilled and cut into small cubes)

In an electric Mixer combine the brown sugar, buttermilk, orange juice, orange zest, vanilla, poppyseeds, and butter. Mix on slow for 2 minutes. Then turn off the mixer and let sit while you combine the dry ingredients.

In a separate bowl add the following:

1 ¾ cup Amazing Flour Mix (recipe found in A Wheat Free Life vs. the Holidays)

¼ cup tapioca flour

2 ½ tsp. baking powder

¾ tsp salt

Mix the dry ingredients well. Then, turn your mixer on low and slowly add in the flour mix. Once all the the flour has been added, turn the mixer speed up to medium and mix for an additional 3 minutes to help the flours incorporate well and the batter will also thicken.

To make the scones you will need a small bowl with about 1/4 cup brown rice flour. This recipe will make about 7-8 scones. So with keeping this in mind you will need to scoop out enough dough (I use a large cookie scoop) then I drop this into the brown rice flour, then roll the dough gently in the flour. Now you can pick up the dough and roll it into a ball in your hands. You can either simply drop this ball onto your cookie sheet and gently push it down to 1 1/4 inches thick or you can make bigger dough balls and after rolling them in the brown rice flour, then rolling them into a larger ball, proceed by pressing the dough down to 1 1/4 inches thick, and then you can use a cookie cutter like I did to make the star shapes in the picture. Then simply add your excess dough to your next batch until you have all your scones cut out.

Preheat your oven to 450 degree.

Place the scones on a cookie sheet and bake @ 450 degrees for 10-15 minutes depending upon your oven.

Then while the scones are still warm place them on a platter and drizzle the glaze over the top.

Glaze: 3/4 cup powdered sugar (I use a corn free powdered sugar) and 1 Tbsp fresh lemon juice and 1 Tbsp Fresh Orange juice.

Amazing flour Mix:

2 cups brown rice flour (gluten free)

½ cup Tapioca Flour

½ cup Arrowroot Flour

1 Tbsp Xanthum gum

Mix well and store in an airtight container
