Wheat/Gluten Free Soft Almond Sugar Cookies
4 cups Amazing Flour Mix (Flour recipe in A Wheat Free Life vs the Holidays)
2 tsp. baking powder
½ tsp salt
1 ½ cups packed brown sugar
1 cup butter
2 eggs
½ tsp pure vanilla
½ tsp pure almond extract
Chill the dough. Then roll the chilled dough out on a floured plastic rolling mat to about ½ inch thick. Next, cut the dough out with whatever shapes you like and then place the raw cutouts onto a cookie sheet and bake 10-12 minutes at 350 degrees.
I like to frost these with a thin butter-cream frosting while they are still hot, then I place them on a rack to cool and lastly, I store them in an airtight container. Makes approximately 2 dozen cookies.
Butter-cream frosting:
1 cup powdered sugar
1 Tbsp butter
2 Tbsp milk
Mix the powdered sugar, butter and milk on high in an electric mixer. Then if you would like different colors you can divide portions into different bowls and add an organic food coloring.
This frosting recipe will frost (as a smooth glaze coat) 2 dozen cookies
Note: ( make sure all spices and extracts are Wheat/Gluten Free)
Amazing flour Mix:
2 cups brown rice flour (gluten free)
½ cup Tapioca Flour
½ cup Arrowroot Flour
1 Tbsp Xanthum gum
Mix well and store in an airtight container
