German Pancakes with fried Apple filling-Wheat/Gluten Free

German Pancakes

3 eggs

¼ cup + 1 ½ Tbsp. Amazing Flour Mix this recipe is in a separate blog posting on this website

¼ tsp salt

½ cup milk (note: alternative milks prevent rising)

3 Tbsp butter

In a bowl add the flour, salt and milk. Once the butter is hot and melted into the glass pan (instructions below) add the eggs into the mixture and gently stir.

(In a 9X13 glass pan add the butter and place into a preheated 450 degree oven. Melt the butter. Remove from the oven.)

Then pour the egg mixture into the butter and bake for 15-17 minutes. Remove from the oven and then serve with the fried apple filling.

Fried Apple Filling

To make the filling you will need:

3 apples peeled, cored and thinly sliced

5 Tbsp. butter

3 Tbsp. sugar

In a medium-sized sauce pan add the butter, apples and sugar and cook until the apples are tender but not to much to have them turn into applesauce.

Now take your German pancake and cut it in half and place this half onto a plate. Then take half of your fried apple filling and cover half of the German Pancake. Lastly fold the uncovered section over the filling and top off by dusting with cinnamon-powdered-sugar ( a mixture of 3 Tbsp powdered sugar and 1 tsp. cinnamon)

Makes 2 servings

Amazing flour Mix:

2 cups brown rice flour (gluten free)

½ cup Tapioca Flour

½ cup Arrowroot Flour

1 Tbsp Xanthum gum

Mix Well and store in an airtight container
