Mint Chocolate Crinkle Cookies-Wheat/Gluten free


Mint Carob Crinkle Cookies

1 + 2/3 cups pure cane granulated sugar

½ cup butter

2 organic eggs

2 tsp vanilla

6 Tbsp unsweetened cocoa powder

1 tsp peppermint oil (for cooking not essential oil)

2 cups Amazing Flour Mix (recipe in A Wheat free Life vs the Holidays on Amazon.com)

2 tsp baking powder

½ tsp sea salt

½-1 cup chopped walnuts

1 pkg of unsweetened Carob chips

In a bowl cream together the sugar, butter and eggs. Then add in the vanilla, cocoa powder, peppermint oil, baking powder and sea salt. Mix well. Lastly slowly add in the Amazing Flour Mix.

Using a cookie or ice-cream scoop drop onto a cookie sheet and bake at 350 degrees for 12-15 minutes, then remove from the oven, remove from cookie sheet onto a wire rack and allow to cool.

Then using a double boiler melt the package of Chocolate chips. Then taking a cooled cookie dip it into the melted carob to completely cover the cookie then place onto a sheet of wax paper and continue until all the cookies are covered. Allow to cool and harden. Enjoy
